Green Onion Soup - by lainch
1lb onions
1oz butter
2 tblspn flour
2 pints of veggie or chicken stock
Peel, slice onions.
Melt the butter in a large pan.
Simmer onions over a low heat (put lid on the pan) for approx 20 mins until soft and transparent - stir occ so they don't brown.
Add flour stir in well - cook just long enough (5mins) so no raw flour taste.
Gradually add the stock stirring all the time (so no lumps) - this also helps the soup to thicken.
Bring to the boil, simmer 20 mins serve.
Very good with croutons or a good strong cheese grated on top.
Warning.... this soup makes you a bit windy
but it's so lovely it's worth it.
