Spicy Red Lentil Soup - by Jellibabi
You need:
1 tbsp olive oil
2 medium onions, chopped
3 cloves garlic, crushed
2 tsp ground cumin
2 tsp curry powder
1/2 tsp sambal oelek
1/4 cup tomato paste
2 x 425g chunky crushed tomatoes
1 ltr vegetable stock
1/2 cup red lentils
2 tsp sugar
1/3 cup coriander leaves, chopped fresh
Method:
1. Heat oil in large pan, add onions, garlic, ground spices + sambal oelek, cook over medium heat, stirring, until onions are soft.
2. Add paste, tomatoes, stock, lentils, sugar + coriander, simmer, uncovered, about 20 minutes or until lentils are tender.
Serving Suggestion: Soup can be made a day ahead. It can also be stored covered separately in the fridge.
Not suitable to freeze but suitable for reheating in the microwave.
